With World Coconut Day taking place on the 2nd of September, Nuts About Cooking is excited to highlight the numerous health and culinary advantages of using coconut oil. With a commitment to promoting wholesome and flavourful cooking, Nuts About Cooking’s refined coconut oil and baking spray are made using coconuts harvested in the tropical paradise of Mozambique by small scale growers.
Coconut oil has garnered global attention for its versatile applications and remarkable health benefits. Coconut oil’s high smoke point make it an ideal choice for sautéing, baking, and frying, and its emollient properties make it an excellent beauty product for skin, hair and nails. On the health side, its medium-chain fatty acids are readily absorbed by the body and converted into energy, making it a valuable addition to active lifestyles. 21 Day Health Reboot Challenge
Nuts about Cooking is excited to share a health-focused initiative that aims to inspire positive lifestyle changes. Packed with meal plans, exercise ideas, delicious recipes and content that highlights the remarkable benefits of coconut oil, this three-week challenge is a must for those that want to spring clean their routine. The 21 Day Health Reboot Challenge was created by Claudia van Rooyen, a Holistic Transformational Coach with a background in physiology and anatomy who has developed methods and techniques to help her clients transform into the best versions of themselves.

Red Lentil Dip
1 cup cooked red lentils
1 Tbsp Nuts About Cooking Coconut Oil
1/3 brown onion, chopped
1 tsp cumin
1 Tbsp tahini
1 clove garlic, chopped
1/2 lemon, juiced
Salt and pepper
- In a pan, add the onion and fry for five minutes
- Add the garlic and cumin and fry for another two minutes
- Remove from the heat and place all ingredients in a blender, season and blend until smooth
- Add a splash of water if necessary
Green Quinoa Salad
2 cups cooked quinoa
2 cups fresh coriander
1 cup mint leaves
1 cup fresh parsley
½ lemon, squeezed
1 clove garlic
1 Tbsp tahini
2 Tbsp Nuts About Cooking Coconut Oil
Salt and pepper
- Place all ingredients (except quinoa) into a blender and process until smooth
- Fold through the quinoa, check seasoning and store in the fridge.
Salted Caramel Date Bites
1.5 cup dates, pitted and soaked
1 cup oats
1 cup sunflower seeds
½ cup desiccated coconut
3 Tbsp Nuts About Cooking Coconut Oil
Pinch salt
- In a food processor, add the oats, sunflower seeds and coconut. Blend until a flour.
- Remove and put aside.
- Add the dates and NAC Coconut Oil to the processor and blend until smooth.
- Add the dry ingredients. Store in the fridge for 2 – 3 hours or until mixture hardens.
- Roll into 25g balls and coat with extra coconut or sesame seeds.
- Freeze half of the balls for a later stage and keep the rest in an airtight container for up to 5 days.
